Pancakes with Bacon & Caramalised Bananas
Ingredients
1 cup Self Raising Flour
1 cup Milk or Buttermilk
1 Egg, beaten
1 tsp Baking Powder*
2 Bananas, sliced lengthways
2 Tbs Brown Sugar
250g Primo Bacon
Maple Syrup
Butter
Don't be afraid of mixing sweet bananas with savoury bacon, the maple syrup marries the two and the result is heavenly!
First make your pancake batter by sifting the flour and baking powder together and making a well in the centre. Pour the milk and beaten egg into the well a little at a time, mixing to combine. (If there's any lumps give it a quick blast with your Barmix!)
Heat a heavy based fry pan over medium heat, add a nob of butter. Then pour in about a cup of batter and cook reasonably slowly. Lift up the edge now and then to check how the pancake is cooking, then when it is golden brown flip it over.
Meanwhile, as your pancake stack is growing put your bacon under the griller and cook until deliciously crisp! Keep your pancakes on a plate under the griller to keep them warm. When all the batter is used add a good nob of butter to the pan, add your banana slices and sprinkle with the brown sugar. Cook on each side for a couple of minutes, taking care when turning them as they will fall apart when done. To serve, top your pancake stack with the bacon and caramalised bananas and finish with maple syrup. Divine!
Serves 2-3
* If you like your pancakes thin and crepe-like leave out the baking powder and use plain flour instead.
